Sauce is sweet baby rays, spiced up with some aji amarillo left over from Peruvian Week, and thinned with some pickle juice.
Damn that looks good. I went vegetarian about 4 years ago and, while I have no regrets, I do miss pulled pork…like, a lot. I’m totally gonna enjoy those sandwiches vicariously through you lol.
I wondered that last week when I made some BBQ chicken sliders kind of like these, if anything on the vegan side has come around to being similar.

Look into jackfruit “pulled pork”! I’ve tried one and it’s pretty good. A bit sweet but good.

I would say it depends on your like of sweetness. The jackfruit lends a little sweetness on its own. Personally I’d probably try something a little more tangy, spiced, or something like a Carolina gold style.
