The only reason that’s any different than any other time Microsoft has released a new OS is that more people own computers now than ever before, improvements in hardware power have slowed significantly, and people are more outspoken online now.
It’s still not reasonable to expect them to support all hardware forever on an aging codebase.
I understand the frustration, but this isn’t some new thing for this new OS in particular.

Assuming SMAPI (the modloader) has updated for 1.6.9, this page is a pretty comprhensive list of mod compatibility with the latest SMAPI and Stardew updates.

I also find that it can be helpful to check community news posts for the most popular mod packs (usually on their discord), as they do a pretty good job of announcing whether the mods they shove together work yet or not.
All that said, 1.6.x type updates, where they aren’t incrementing the first or second number, usually don’t break as many things. Personally, I’d just make a backup of your entire Stardew folder before you install the 1.6.9 update (and the latest SMAPI update, and any updates for your mods) and see how it goes. SMAPI will usually warn you in the console window at startup if it sees any mods it knows have broken. If shit’s fucked, just restore your backup copy and try again in two weeks.

Sorry to break it to you, but this has been the state of games purchasing/preservation since at least the 90s. Check instruction manuals for old cartridge games, most have disclaimers in the back that you only purchased a license.
The bright side is that despite all of that, games preservation is still going quite strong. Just through piracy and not entirely legal means. This really doesn’t change anything, except online only games won’t be as easy to preserve as people had hoped. This isn’t a step back in any way. It’s just a confirmation that things are still what they have been for decades.
