Is anonymous data collection really that bad? They’ve also been open and explained their whole process. Like surely data collection needs to happen at some level to inform new features and design?

Well those games are quite different to Elden Ring. Perhaps try the pathfinder games, there are lots of CRPGs to try. I personally only experienced 1 bug in bg3 and it was patched out, but with games of that size you're going to get some, it's almost inevitable.

You might be happier with a different game, I would look at other RPGs in the genre that fit what gameplay options you would like.
