I built a data logger a few years back. The data you likely want is on the CAN BUS network. You’ll need a CAN BUS hat for a pi or a pi with it baked in. There are other ways but you will likely end up realizing a pi or similar is best.
You’ll need to log the data while away from home and then sync the data when WiFi is available. Requiring the pi to stay powered after the car shuts off. Easy to do with some relays.
Depending on what data you are looking for it shouldn’t be too much work to get going on logging.

As weird as it sounds I use Edge for things like that. It keeps me from accidentally using the same browser for other tasks. Because I instantly know I’m in the wrong browser if I’m doing other work.

100TB, external enclosures, no backups 🤔 I would pickup a used storage server with a lot of drive bays from eBay. The external bays seem attractive but I’ve never heard good stories about performance or reliability.
An ESP8266 with temp sensor and a script to pull public weather station data with your local temperature readings into a text file is likely the cheapest way.
